Mini Blueberry Cheesecakes with Bio-K+

Serves 8

 

Ingredients

Crust:

1 cup almonds

1 cup dates

2 tbsp water

 

Blueberry filling:

1/3 cup ground chia seeds

1 cup frozen wild blueberries

500 g cream cheese

2 bottles blueberry-flavored Bio-K+

2 tbsp maple syrup

1 tsp vanilla extract

 

Garnish:

Wild blueberries and mint

 

Preparation

Crust:

In a food processor, process almonds, dates and water until you get a dense, homogeneous paste and press it down firmly in the bottom of eight small jars.

 

Blueberry filling:

In a large bowl, use an electric mixer to beat all ingredients together until smooth and well incorporated.

Spoon the mixture into the eight jars.

Refrigerate for three hours.

 

Before serving, garnish with fresh wild blueberries and mint.
