Probiotic Chia Pudding/Smoothie with Goji and Mango

    Fruity and invigorating, this pudding/smoothie is great to support your intestinal health, thanks to the Bio-K+ Vegan Drinkable Probiotic - Mango flavor and the chia seeds. Perfect for breakfast or dessert especially enjoyable during the summer!

    INGREDIENTS

    Chia Pudding

    4 tbsp chia seeds

    1/3 cup coconut milk

    ½ tsp maple syrup

    2 drops pure vanilla extract

     

    Smoothie

    ¼ cup goji berries

    ¼ cup hot water

    ½ banana

    1 cup diced mango

    1 tbsp unsweetened shredded coconut

    1 tbsp lemon juice

    1 bottle of Bio-K+ fermented soy (mango flavor)

     

    METHOD

    Vigorously mix all chia pudding ingredients and let sit in the refrigerator for 30 minutes. To prepare the smoothie, pour hot water over goji berries to rehydrate. Let soak for a few minutes until water reaches room temperature.

    Blend all smoothie ingredients in a blender.

    Divide half of the smoothie mixture between two glass jars. Add evenly distributed chia pudding to each jar. Pour the remaining half of the smoothie over the top. Garnish with goji berries, chia seeds, shredded coconut, and popped quinoa if desired.
